Marinated Salami Salad from Viking 4/2015
Serves 20

600 grams chorizo, cut into strips
600 grams salami milano, cut into strips
800 grams bell peppers (3 colors), julianne
300 grams red onion
100 milliliters sherry vinegar
50 milliliters olive oil, salt and pepper
1/8 bunch parsley, chopped

Toss and marinade all ingredients together, check seasoning and chill well
